Fueling Your Journey: Essential Nutrition for a Healthy Pregnancy and Postpartum Recovery… Fried Eggs, Veggies, and Sourdough!

This time it’s fried eggs, sausage, veggies, and guac on sourdough bread. I really wanted to give you a look at a breakfast that I highly recommend really anytime, BUT, is perfect to help you fuel your prenatal or postpartum journey. Here’s why:

🍳Egg yolks (yes even runny eggs) have choline which is needed for baby’s nervous system development
🫑Bell pepper has so much Vitamin C which is needed for for baby’s teeth and bones and for mom to absorb iron
🥬Red chard has vitamin A which is needed for organ function and immune support along with Vitamin K which is needed for blood clotting and bone building
🥑Guac has fiber and nutritious fats which is needed for proper gut health
🍞Sourdough because it makes me happy lol

Ingredients
2 eggs
1/2 bell pepper
2 handfuls of red chard
1 package of pre-made guac
2-3 ounces of sausage
2 slices of sourdough bread
1 TBSP of butter
Salt, garlic powder, and pepper

Steps

  1. Place 1 skillet on burner at medium to medium high heat

  2. Place a skillet on another burner at medium to medium high heat

  3. Cut your veggies

  4. Once skillet 1 is at the right temperature, add sausage, and cook to desired temperature

  5. Once skillet 2 is at the right temperature, add 2 glugs of olive oil to the skillet, then add the veggies, and cook to desired tenderness

  6. While the food is cooking, toast bread then spread guac onto the bread

  7. After sausage and veggies are done cooking and plated with your bread, add more butter to a pan and fry eggs to desired

  8. Add salt and pepper to taste

  9. Enjoy!
